Sodium copper chlorophyllin is a semi-synthetic chlorophyll-derived pigment produced from natural green plant materials, including bamboo leaves, alfalfa, clover, and other chlorophyll-containing botanical sources. The manufacturing process involves extracting natural chlorophyll using suitable organic solvents, followed by chemical modification to improve stability and functional performance.
During production, the magnesium ion at the core of the chlorophyll structure is replaced with copper ions, enhancing pigment stability. Subsequent alkaline saponification removes methyl and phytol groups and converts them into carboxyl groups, resulting in the formation of a stable disodium salt structure.
